Ground Enchiladas

  • 12 tortillas
  • lard
  • 8 ancho chiles, deveined and seedless, for the sauce
  • 2 cups water, for the sauce
  • salt, for the sauce
  • 350 grams chorizo, fried and crumbled, for the filling
  • 3 cups lettuce, cleaned and cut into thin strips, for garnish
  • 4 radishes, chopped, for garnish
  • 3 zucchinis, cooked and chopped, for garnish
  • 40 grams dried árbol chile, to accompany
  • 1/2 cups vinegar, to accompany

  • Put the water and chiles in a pot to boil, turn off the heat and let sit for 10 more minutes. Blend, strain, and add salt to taste.
  • Toast the árbol chiles on a griddle, grind with vinegar, and add salt if necessary.
  • Heat the tortillas and dip them in the ancho chile sauce, then fry in lard.
  • Fill the tortillas with chorizo and fold in half.
  • Sprinkle with lettuce, radish, and zucchini.
