Mexican-Style Eggs with Chilorio

  • 2 tablespoons vegetable oil
  • 1/2 cups onion, finely chopped
  • 1/2 cups tomato, finely chopped
  • 1/4 cups serrano chile, finely chopped
  • 1 cup chilorio
  • 5 eggs
  • salt
  • pepper
  • flour tortillas, to accompany
  • guacamole, to accompany

  • Heat the oil in a skillet over medium heat, then sauté the onion until it slightly changes color, add the tomato, the serrano chili and cook for 2 more minutes. Then, add the chilorio and sauté for 5 minutes.
  • In the same skillet, push the chilorio to one side, add the eggs, season with salt and pepper, and cook for 5 more minutes. Mix with the chilorio and cook on low heat for 5 minutes. Set aside.
  • Serve the Mexican-style eggs with chilorio with warm tortillas and guacamole.
