Heat the oil in a skillet over medium heat, then sauté the onion until it slightly changes color, add the tomato, the serrano chili and cook for 2 more minutes. Then, add the chilorio and sauté for 5 minutes. In the same skillet, push the chilorio to one side, add the eggs, season with salt and pepper, and cook for 5 more minutes. Mix with the chilorio and cook on low heat for 5 minutes. Set aside.
