Mix the cubed cheese and the mushrooms; place about 2 tablespoons in the center of each tortilla. Place another tortilla on top.
Cook the quesadillas in batches, over medium-high heat in a large skillet sprayed with cooking oil, for 2 to 3 minutes on each side or until they are slightly golden on both sides. When they are almost ready, add some shredded cheese on top of each tortilla to let it brown a bit. Repeat with the remaining mixture and tortillas.
Cut each quesadilla into 4 and serve with the sauce.
