Preparation
Mix the diced cheese and the mushrooms; put about 2 tablespoons in the center of each tortilla. Put on another tortilla.
Cook the quesadillas in batches, over medium-high heat and in a large skillet sprayed with cooking oil, 2 to 3 minutes per side or until golden brown on both sides. When they are almost ready, add a bit of the grated cheese on top of each tortilla so that it browns a little. Repeat with the rest of the mixture and the tortillas.
Cut each quesadilla into 4 and serve with the sauce.
