Poached Eggs

Poached eggs is an easy and delicious recipe from Mexican cuisine; they are eggs cooked in a red tomato broth sauce. Perfect for a delicious breakfast.

  • 4 eggs
  • 2 tomatillos
  • 1/4 white onions
  • 1/2 Jalapeño chiles
  • granulated chicken bouillon
  • black pepper
  • 1 teaspoon vegetable oil
  • 4 slices deli ham
  • 3 1/2 cups water
  • 1 teaspoon salt

  • Chop the ham, onion, tomato, and chili. Fry everything in a hot pot with oil.
  • Add water and bring to a medium heat until it starts to boil.
  • Season with chicken broth, salt, and pepper to taste.
  • Incorporate the eggs one by one into the broth without breaking the yolk.
  • Let it boil for 15 minutes over medium heat and serve immediately.
