  • 1 cup Poblano chile, roasted and sliced for the sauce
  • 1/4 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1/2 cups jocoque, for the sauce
  • 1 cup low-fat milk, light, for the sauce

  • 1 tablespoon olive oil, for the sauce

  • 2 tablespoons low-fat milk, light
  • 1 teaspoon onion powder

  • panela cheese, in cubes, for filling

  • Blend the roasted poblano strips with onion, garlic, jocoque, skim milk, and season with salt and pepper.
  • Heat a small pot over medium heat, add the oil, and pour in the sauce, cook for 10 minutes, or until it has a thick consistency.
  • For the omelette, in a bowl beat the eggs with the milk, onion powder, and season with salt and pepper. Set aside.
  • In a non-stick skillet, add a little olive oil spray and pour in the previous mixture, cook for 5 minutes on low heat on each side. Remove from heat and set aside.
  • Fill the omelette with panela cheese, serve on a plate, pour the poblano sauce over it, garnish with red onion, and enjoy.
