Authentic Meat in Its Juice

  • 3 tomatillos, cooked
  • 3 árbol chiles, roasted
  • 1 garlic
  • 3/4 cups chicken broth
  • 500 grams beef tenderloin Tampiqueña strip, in medium cubes
  • 250 grams bacon, in medium cubes

  • pepper
  • serrano chile
  • 1 cup water
  • granulated chicken bouillon
  • 1 cup black beans, cooked, for accompaniment
  • 1 tablespoon cilantro, finely chopped, for garnish
  • 1/2 cups onion, finely chopped, for garnish
  • 1/2 cups radish, in thin slices, for accompaniment
  • 3 green onions, fried in oil and seasoned with salt, for accompaniment
  • tortillas, passed through oil, for accompaniment

  • Blend the cooked green tomato, tree chili, garlic, and chicken broth. Season with salt and pepper, set aside.
  • Fry the bacon in a skillet for 5 minutes or until golden brown. Remove the bacon and place it on a tray with paper towels.
  • Add the meat to the same skillet, season with salt and pepper, cook for 5 minutes, add the green onions, and when the meat releases its juice, add the tomato sauce, chicken concentrate, and cook for 10 minutes. Set aside.
  • Serve on a large plate along with beans, cilantro, onion, radish, green onions, bacon, and accompany with tortillas. Enjoy!
