Soupy beef birria cooked with dried chiles accompanied by a sauce, mainly using ancho chili, garlic, onion, cloves, vinegar, cumin, and sesame seeds. A classic dish of Mexican cuisine that you can prepare at home.
2 ancho chiles, dry, roasted, deveined, and seedless
4 dried guajillo chiles, roasted, deveined, and seedless
8 cloves garlic, roasted with skin
1/2 onions, roasted
1 teaspoon cumin, roasted
20 black pepper, roasted
4 cloves, roasted
1 teaspoon oregano
1/2 cups white vinegar
1 kilo beef, with bone, washed, and cut into medium cubes
2 cups Del Fuerte® natural tomato purée
2 tablespoons coarse salt
1/2 cups white onion, finely chopped
1/2 cups fresh cilantro, finely chopped

Preheat the oven to 180° C.
Blend the chipotles, ancho chiles, guajillo chili, unpeeled garlic, white onion, cumin, pepper, cloves, oregano, and white vinegar. Set aside.
In a baking dish, add the beef, the previous preparation, and let it marinate for 5 hours.
Once marinated, cover with aluminum foil and bake for 4 hours until the meat is tender.
Once the meat is well-cooked, reserve the cooking juices and add them to a pot, add Natural Tomato Puree Del Fuerte®, cook for 10 minutes and season the preparation with coarse salt.
Serve, accompanied by tortillas, lime, onion, and cilantro.
