Ingredients: 4 cups water; 6 chipotle chiles in adobo sauce; 2 ancho chiles, dry, roasted, deveined, and seedless; 4 dried guajillo chiles, roasted, deveined, and seedless; 8 cloves garlic, roasted with skin; 1/2 onions, roasted; 1 teaspoon cumin, roasted; 20 black pepper, roasted; 4 cloves, roasted; 1 teaspoon oregano; 1/2 cups white vinegar; 1 kilo beef, with bone, washed, and cut into medium cubes; 2 cups Del Fuerte® natural tomato purée; 2 tablespoons coarse salt; 1/2 cups white onion, finely chopped; 1/2 cups fresh cilantro, finely chopped; 20 corn tortillas
