Beef Tartare

  • 100 grams beef tenderloin
  • 1 egg yolk
  • 1 tablespoon mustard
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Tabasco sauce
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon capers
  • 1/3 tablespoons chives, finely chopped
  • 1 lime
  • salt and pepper
  • 1 egg yolk, for decoration

  • Chop the beef fillet into very small cubes and set aside.
  • In a bowl, mix the egg yolk with the mustard, olive oil, Worcestershire sauce, and Tabasco sauce.
  • Add the onion, parsley, capers, and beef, and mix. Season with green onion, lemon juice, salt, and pepper.
  • Blanch the egg yolk in hot water for 1 minute. Serve the beef with the egg yolk and accompany with toasted bread.
