Beef with Chipotle and Green Beans

Try these steaks with a chipotle tomato sauce, a very easy beef recipe to prepare, which will also be very rewarding. This stew is perfect for any day of the week; if you don’t want it to be too spicy, add a little white vinegar to make the flavor more neutral. Complement with white rice or corn tortillas for a complete meal.

  • 6 tomatillos, roasted
  • 1 clove garlic, roasted
  • 1/4 onions, grilled
  • 3 guajillo chiles, cleaned and soaked in hot water
  • 2 tablespoons chipotle chile in adobo sauce
  • 1/2 cups beef broth
  • 1/4 cups orange juice
  • 1/2 tablespoons cumin powder
  • 1/4 cups cilantro
  • 2 tablespoons vegetable oil, or olive oil
  • 1/2 cups onion, in strips
  • 500 grams beef, cut into cubes
  • 1 cup green beans, cooked and cut

  • For the sauce, blend the tomato, garlic, onion, guajillo pepper, chipotle pepper, beef broth, orange juice, cumin, and cilantro until fully incorporated. Set aside.
  • In a saucepan with hot oil, sauté the onion until it changes color, add the cubed beef and cook for 8 minutes. Pour in the tomato sauce; season with salt and pepper, cover, and cook for 20 minutes or until the meat is tender, then add the green beans. Cook for 4 more minutes.
  • Serve in a deep plate, garnish with cilantro, and accompany with white rice.
