Meat Pie with Cornbread

  • 1 cup wheat flour, for the corn pie
  • 1 cup corn masa flour, for the corn pie
  • 1 teaspoon baking powder, for the corn pie
  • 1 teaspoon salt, for the corn pie
  • 1 egg, for the corn pie
  • 1 cup cow's milk, for the corn pie
  • 1/2 cups butter, melted, for the corn pie
  • 1 cup corn kernels, for the corn pie
  • 1 cup bacon, finely chopped
  • 1/2 onions, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 500 grams ground beef
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • salt and pepper
  • 2 tablespoons parsley, finely chopped
  • 400 grams La Costeña ® Mexican sauce, (1 jar)
  • 1 1/2 cups Manchego cheese, grated

  • Preheat the oven to 180°C.
  • In a bowl, mix the wheat flour, cornmeal, baking powder, and salt.
  • In a bowl, mix the egg, milk, butter, corn kernels, and gradually incorporate the dry ingredients until you have a homogeneous mixture.
  • Pour into a previously greased pie mold and bake for 20 minutes.
  • In a skillet, cook the bacon with the onion and garlic. Add the ground beef, season with cumin, thyme, salt, pepper, and parsley. Cook for 10 minutes. Set aside.
  • Mash the cornbread with a fork, add La Costeña® Mexican Sauce, add the meat and Manchego cheese.
  • Bake for 5 minutes until the cheese is gratinated.
  • Serve hot, accompanied by La Costeña® Mexican Sauce.
