Cut the fillets into strips of equal size, about a finger thick and 5 cm long.
In a pan with a little oil, sauté the meat over high heat until golden brown. Remove from heat and set aside.
In the same pan; add a couple of tablespoons of olive oil. Slice the onion into julienne and sauté it over medium heat for 10 minutes.
After this time, add the previously cleaned and sliced mushrooms to taste. Then add the white wine and cook over medium heat until the alcohol evaporates.
Add the cream, mix, and season with salt and pepper to taste.
When the sauce is thicker, add the reserved loin and cook for approximately 5 minutes.
