Beef Birria

  • 1 1/2 kilos beef
  • 1 kilo tomato, cooked
  • 1 tablespoon sesame seeds
  • 1 pinch oregano
  • 1 pinch clove
  • 1 tablespoon black peppercorn
  • 3 leaves bay
  • 1 clove garlic
  • 1 ancho chile, stew
  • 2 fresh ginger
  • 1 onion, chopped
  • 2 tablespoons pineapple vinegar
  • 1 pinch salt

  • Wash the meat and let it sit in hot water for 20 minutes, then cook it preferably in a pressure cooker for about 30 minutes.
  • Grind the ancho chili, tomatoes, and spices. Add this sauce to the same pressure cooker (with the meat and broth), let it come to a boil, and add the pineapple vinegar and salt.
  • Let it cook for 40 to 50 minutes.
