Wash the meat and let it sit in hot water for 20 minutes, then cook it preferably in a pressure cooker for about 30 minutes. Grind the ancho chili, tomatoes, and spices. Add this sauce to the same pressure cooker (with the meat and broth), let it come to a boil, and add the pineapple vinegar and salt.
