Fillet with Mustard and Balsamic Vinegar Sauce

  • 1 tablespoon olive oil
  • 4 beef tenderloins, thick
  • 1/2 cups balsamic vinegar
  • 1/4 cups Dijon mustard

  • Heat the oil in a large skillet over high heat.
  • Season the fillets with salt and pepper on both sides.
  • Once the skillet is very hot, add the fillets. Cook on that side for 2-3 minutes.
  • Once the juices come out, flip and cook for another 2-3 minutes.
  • Remove the fillets from the skillet and keep covered with aluminum foil.
  • Add the balsamic vinegar to the skillet and let it reduce, cooking for 1-2 minutes.
  • Remove from heat and add the Dijon mustard, mixing well with a whisk.
  • Serve the fillets drizzled with the sauce.
