1 tablespoon olive oil
4 beef tenderloins, thick
1/2 cups balsamic vinegar
1/4 cups Dijon mustard

Heat the oil in a large skillet over high heat.
Season the fillets with salt and pepper on both sides.
Once the skillet is very hot, add the fillets. Cook on that side for 2-3 minutes.
Once the juices come out, flip and cook for another 2-3 minutes.
Remove the fillets from the skillet and keep covered with aluminum foil.
Add the balsamic vinegar to the skillet and let it reduce, cooking for 1-2 minutes.
Remove from heat and add the Dijon mustard, mixing well with a whisk.
Serve the fillets drizzled with the sauce.
