Traditional Beef Wellington

Prepare this traditional and sophisticated English recipe ideal for surprising anyone. The term Wellington generally refers to those cuts of meat that are cooked inside a pastry, such as lamb, sausage, or fish.

  • 2 cups button mushrooms, finely chopped
  • 2 tablespoons butter, melted
  • 1 shallot, finely chopped
  • 1 clove garlic, finely chopped, for the duxelles
  • 2 sprigs thyme, for the duxelles

  • 700 grams center-cut tenderloin, (1 piece)
  • 12 crepes
  • 500 grams puff pastry
  • 1 cup flour, for spreading
  • 1 egg, for brushing

  • Heat the butter, add the shallot, garlic, add the mushrooms, season with thyme, salt, and pepper. Cook over medium heat for 20 minutes until the liquid reduces.
  • Season the beef fillet with salt and pepper, heat the oil over high heat in a large skillet, place the beef fillet and sear for 2 minutes on both sides.
  • Place the crepes on non-stick paper, add the mushroom pâté, place the beef fillet, roll it up pressing to maintain the shape, freeze in your Samsung Black Stainless refrigerator for 20 minutes.
  • Roll out the puff pastry on a floured surface to a thickness of approximately 3 mm, place the fillet wrapped in crepes.
  • Wrap the fillet with the puff pastry, cut off the excess pastry and brush with egg. Set aside.
  • Roll out the excess puff pastry to form a rectangle of 15x25 cm, using a knife cut lines of 5 cm, then cut lines of 3 cm over the spaces of the 5 cm lines.
  • Roll out the dough, to separate the diamonds, place it over the fillet and brush again with egg.
  • Bake in your Samsung Smart Oven Hot Blast for 20 minutes.
  • Let it rest for 7 minutes before cutting to allow the juices to settle.
