Chicharrón in green sauce is delicious in warm Milpa Real tortillas or to accompany breakfast eggs. You can use store-bought green sauce and have it ready in 10 minutes.
Grind the chiles, garlic, tomatillo, salt, pepper, and water in a food processor for a few moments. Add the cilantro and grind for a few more seconds.
Heat the oil in a pot and sauté the onion for about 5 minutes until it becomes transparent. Add the tomatillo sauce and cumin. Cook over medium heat for 10 minutes. Check the seasoning.
Add the chicharrón, cover the pot, and continue simmering for 10 minutes until it becomes soft.
Alternatively, you can use store-bought green sauce and just cook the chicharrón for 10 minutes on low heat until it becomes soft.
