Chicharron in Green Sauce

Chicharrón in green sauce is delicious in warm Milpa Real tortillas or to accompany breakfast eggs. You can use store-bought green sauce and have it ready in 10 minutes.

  • 1/4 balls pork rinds, cut into pieces
  • 3 serrano chile
  • 2 cloves garlic
  • 1 ball tomatillo, without skin
  • 1 bottle salt
  • 1/4 bottles black pepper
  • 1 glass water
  • 1 glass fresh cilantro, fresh
  • 1 drizzle vegetable oil
  • 1 onion, large, sliced
  • 1/4 bottles cumin, ground
  • Milpa Real® tortilla

  • Grind the chiles, garlic, tomatillo, salt, pepper, and water in a food processor for a few moments. Add the cilantro and grind for a few more seconds.
  • Heat the oil in a pot and sauté the onion for about 5 minutes until it becomes transparent. Add the tomatillo sauce and cumin. Cook over medium heat for 10 minutes. Check the seasoning.
  • Add the chicharrón, cover the pot, and continue simmering for 10 minutes until it becomes soft.
  • Alternatively, you can use store-bought green sauce and just cook the chicharrón for 10 minutes on low heat until it becomes soft.
