Chicken in Creamy Yogurt, Garlic, and Lemon Sauce

  • 1 head garlic, whole
  • 2 tablespoons olive oil
  • 3 cups yogurt, for the sauce
  • 1/2 cups lime juice, for the sauce
  • 1 pinch salt
  • 1 pinch pepper
  • 3 tablespoons olive oil
  • 2 chicken breasts, cut in half
  • 1/4 cups chicken broth
  • 2 tablespoons paprika
  • 3 tablespoons lemon zest
  • 2 sprigs fresh thyme
  • 1 lemon, cut in half and sliced
  • 1 pinch salt
  • 1 pinch pepper
  • 1/4 cups parsley, finely chopped

  • Preheat the oven to 200° C.
  • On a baking sheet, place the head of garlic and drizzle with olive oil. Bake for 20 minutes, until the garlic releases its aroma and is soft. Remove from the oven, peel the cloves, and set aside the roasted garlic.
  • Blend the garlic with the yogurt and lemon juice. Set the mixture aside.
  • Heat a skillet over medium heat with olive oil, fry the chicken breasts until golden brown on both sides, add the chicken broth, and mix with the previous preparation. Season with paprika, lemon zest, fresh thyme, yellow lemon, salt, and pepper.
  • Cook for 5 minutes until you achieve a thick sauce, then add chopped parsley. Serve and enjoy.
