Chicken in Green Sauce with Epazote

Classic chicken in green tomato sauce with epazote, cilantro, serrano chili, and the delicate touch of coriander seeds is ideal to accompany with red rice and vegetables. You can't miss this dish served on a freshly made tortilla. Incredible.

  • 10 tomatillos, quartered
  • 2 serrano chiles
  • 3 cloves garlic
  • 1/2 onions, chopped
  • 1 sprig fresh cilantro
  • 1 sprig epazote
  • 2 tablespoons vegetable oil
  • 1/3 onions
  • 1 pinch salt
  • 1 pinch pepper
  • 1 kilo chicken, (thigh and leg) cooked

  • Heat water over medium heat, add the tomatoes and chiles until they change color.
  • In a blender, add the tomatoes, chiles, garlic, onion, cilantro, epazote and blend for 1 min.
  • Heat the oil, add the onion, sauté until it changes color, pour in the sauce, season with salt and pepper, and cook for 10 min.
  • Add the pieces of chicken and cook for 5 more minutes.
  • Serve with rice.
