Chicken with Cilantro Cream

  • 1 chicken breast, boneless, skinless; cut into strips
  • 1 teaspoon salt, for the marinade
  • 1/4 cups olive oil, for the marinade
  • 1 teaspoon pepper, for the marinade
  • 1 teaspoon oregano, for the marinade
  • 1 tablespoon butter, for frying the chicken strips
  • 2 cups fresh cilantro, for the sauce
  • 2 cups evaporated milk, for the sauce
  • 2 cups chicken broth, for the sauce
  • 1/2 cups cream cheese, for the sauce
  • 1/8 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 3 tablespoons butter, for the sauce
  • 3 tablespoons flour

  • In a bowl, marinate the chicken breasts with olive oil, salt, pepper, and oregano for about 5 minutes.
  • Cook the chicken in a skillet over medium heat with the butter until cooked through. Keep covered.
  • For the sauce, blend the cilantro with the evaporated milk, chicken broth, cream cheese, onion, and garlic until you get a homogeneous mixture.
  • Heat a pot over medium heat, add the butter and flour all at once, cook until you get a golden paste. Add the sauce and let it come to a boil, lower the heat and cook until thickened. Season.
  • Serve the chicken breasts on a plate and drizzle with the hot cilantro cream.
