Chicken Breast Stuffed with Guacamole

  • 3 avocados, for the guacamole
  • 1/2 onions, finely chopped for the guacamole
  • 3 tomatoes, diced for the guacamole
  • 3 serrano chiles, finely chopped, for the guacamole
  • 1 tablespoon fresh cilantro, finely chopped, for the guacamole
  • 1/2 cups lime juice, for the guacamole
  • 1/4 cups olive oil, for the guacamole
  • 1/2 teaspoons salt, for the guacamole
  • 1/4 teaspoons pepper, for the guacamole
  • 4 chicken breasts, flattened
  • 1/2 teaspoons salt, for the breasts
  • 1/4 cups flour
  • 1 egg
  • 1/2 cups breadcrumbs
  • 1/4 cups Parmesan cheese, grated
  • 1/4 cups vegetable oil

  • For the guacamole, mix all the ingredients in a bowl and combine well until creamy, season, and set aside.
  • Lay the breasts on a cutting board and add salt on both sides. Place 3 tablespoons of guacamole at one end of each breast and roll up. Secure with a toothpick if necessary, making sure the guacamole doesn't spill out.
  • In separate bowls, place the flour, egg, and breadcrumbs mixed with cheese.
  • Carefully coat the breasts in flour, then dip in egg, removing the excess, and finally coat with breadcrumbs.
  • In a pan, heat the oil and fry each breast over medium heat until cooked through and golden brown on the outside.
