3 serrano chiles, finely chopped, for the guacamole
1 tablespoon fresh cilantro, finely chopped, for the guacamole
1/2 cups lime juice, for the guacamole
1/4 cups olive oil, for the guacamole
1/2 teaspoons salt, for the guacamole
1/4 teaspoons pepper, for the guacamole
4 chicken breasts, flattened
1/2 teaspoons salt, for the breasts
1/4 cups flour
1 egg
1/2 cups breadcrumbs
1/4 cups Parmesan cheese, grated
1/4 cups vegetable oil

For the guacamole, mix all the ingredients in a bowl and combine well until creamy, season, and set aside.
Lay the breasts on a cutting board and add salt on both sides. Place 3 tablespoons of guacamole at one end of each breast and roll up. Secure with a toothpick if necessary, making sure the guacamole doesn't spill out.
In separate bowls, place the flour, egg, and breadcrumbs mixed with cheese.
Carefully coat the breasts in flour, then dip in egg, removing the excess, and finally coat with breadcrumbs.
In a pan, heat the oil and fry each breast over medium heat until cooked through and golden brown on the outside.
