Today we have another one of my favorite dishes. It is a very simple recipe, and the result is a delicious dish, chicken in wine. The amount of wine, in case you are making less chicken, is enough to cover the pieces of meat.
In the pot where we will prepare the recipe, we lightly brown the chicken (previously seasoned with salt to taste) on both sides and set aside. We will remove the excess oil since we only need a little to sauté the onion.
Chop the onion into small pieces and add it to the pot to sauté.
When the onion is nicely sautéed, we add the crushed garlic cloves, ham, and mushrooms, and stir everything well, letting it cook for a couple of minutes.
After 2 minutes, we add the chicken and wine, bring it to a boil, and immediately lower it to a simmer. Let it cook for about 1 hour until the meat is tender. During this hour of cooking, the pot should be covered.
When the meat is ready, we mix the cornstarch and 3 tablespoons of wine in a glass and gradually add it to the pot, stirring well to combine it with the sauce. The mixture of cornstarch and wine should not be too thick or too soupy.
Let it cook for another 3-4 minutes, and the dish will be ready. To enjoy this dish more, it is recommended to prepare it a day in advance as the meat is more flavorful.
