Chicken Stew

Delicious recipe for chicken stew without complications, with a touch of almond and sherry that give this dish an exquisite flavor.

  • 1 kilo chicken, legs and thighs
  • 1/2 kilos potato, cooked, peeled, and cubed
  • 50 grams raisins
  • 50 grams almonds, sliced
  • 1/2 kilos tomato, in rounds
  • 1 onion, sliced
  • 2 cloves garlic, chopped
  • 1 cup sherry
  • 1 cup chicken bullion, (broth)
  • salt, and pepper to taste
  • sugar, to taste
  • 1/4 cups olive oil

  • The chicken is cooked, removed from the broth, arranged in a pot, and on top we add the already cooked and peeled cubed potatoes.
  • In a large skillet, heat the olive oil, add the sliced tomato, onion, garlic, almonds, raisins, and sauté everything until the onion is soft.
  • The sauté is placed on top of the chicken and potatoes, then add the cup of broth, sherry, and season to taste with salt, pepper, and sugar.
  • Cook for 10 minutes on low heat, covered, then remove from heat and serve.
