The chicken is cooked, removed from the broth, arranged in a pot, and on top we add the already cooked and peeled cubed potatoes. In a large skillet, heat the olive oil, add the sliced tomato, onion, garlic, almonds, raisins, and sauté everything until the onion is soft. The sauté is placed on top of the chicken and potatoes, then add the cup of broth, sherry, and season to taste with salt, pepper, and sugar. Cook for 10 minutes on low heat, covered, then remove from heat and serve.
