Chicken in Cream and Poblano

This recipe is my family's favorite. I hope you like it as much as we do; it's easy, delicious, and economical. This dish is generational, as my grandmother, my mother, and now I have made it.

  • 1 cup chicken, shredded
  • 5 poblano peppers, roasted and deveined
  • 1 cup corn kernels
  • 2 cups sour cream
  • 1 tablespoon butter
  • pepper, to taste
  • 1/4 onions, in thin slices
  • salt, to taste

  • Put the tablespoon of butter, add the onion, and sauté until it turns translucent, then add the roasted poblano, deveined and cut into strips.
  • Add the corn kernels, season with salt and pepper, let it simmer for 5 more minutes, lower the heat, add the cream, and it's ready.
