Lemon and Rosemary Chicken Thigh Skewers

Prepare these lemon chicken thigh skewers and give a twist to your chicken recipes. Season them with a little rosemary for a Mediterranean flavor.

  • 2 chicken thighs
  • 5 lemons, in thin slices
  • 1 bunch fresh rosemary, small
  • 1/4 cups olive oil
  • 1 romaine lettuce
  • 4 plums
  • 5 fresh figs
  • 2 teaspoons salt
  • 1 teaspoon ground pepper

  • Debone and cut the chicken thighs into strips.
  • Insert a skewer, piercing through the strip of thigh.
  • Place the skewers in a baking dish and add the lemons cut into thin slices, add rosemary. Season with salt and pepper and finish with a little olive oil, mix.
  • Heat the pan to high temperature, and sear the skewers until well cooked.
  • Cut the figs and the plum into quarters, tear the lettuce by hand. Prepare a bed with the fruits and the lettuce, place the skewers on top of this and also some lemon slices.
