Season the chicken thighs with salt and pepper and brown them in a pan with oil over medium heat. Be careful not to burn the chicken.
Remove them and set aside. In the same pan, sauté the onion and garlic, add the chicken thighs, the Norteña Cocina Mestiza® Sauce, and the tomato puree. Lower the heat and adjust the seasoning. Cover the pan so the thighs cook well. If you notice the sauce is too thick, add a little water.
Melt the butter in a pan over low heat and sauté the potatoes, aiming for them to brown. Season with salt and pepper, and once you turn off the heat, add finely chopped cilantro.
