Colombian Sancocho

  • 1 tablespoon vegetable oil
  • 800 grams beef rib, clean and fat-free, in medium pieces
  • 1 kilo pork chump, in medium pieces
  • 1 onion, chopped
  • 3 cloves garlic, chopped
  • 1 teaspoon cumin, whole
  • 1 cup cilantro leaves
  • salt
  • pepper
  • water
  • 3 chicken drumsticks, skinless
  • 2 ears corn, white, cut into quarters
  • 1 cassava, cut into quarters
  • 1 banana, in quarters, semi-ripe
  • 4 potatoes, peeled, in cubes
  • 1/2 cups cilantro, chopped
  • white rice, for serving
  • avocado, in slices, for serving

  • Seal the beef ribs and pork meat for 6 minutes in a pressure cooker with vegetable oil. Remove and set aside.
  • In the same pot, sauté the onion and garlic until they change color. Add the cumin, cilantro, meat, and water, making sure it covers all the ingredients. Season with salt and pepper, close the pressure cooker, and cook for 35 minutes over medium-low heat, remembering to start timing once the steam begins to escape.
  • After the time is up, open the pot and add the chicken, corn, cassava, potato, plantain, and cilantro. Season with salt and pepper, and cook for 30 minutes or until the vegetables are tender.
  • Serve hot and accompany with white rice, slices of plantain, and avocado slices.
