Eggs Wrapped in Meat

  • 6 San Juan® eggs
  • 2 cups ground beef
  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • salt
  • pepper
  • 1 teaspoon nutmeg
  • 1/2 cups parsley, finely chopped
  • 1 cup flour, for breading
  • 2 San Juan® eggs, for breading
  • 1 cup breadcrumbs, for breading
  • vegetable oil
  • chives, for decoration
  • blue cheese dressing

  • In a pot of boiling water, cook the eggs for 15 minutes. Remove and place in a bowl with ice water to cool completely and make peeling easier.
  • In a bowl, mix the ground meat with the onion, garlic, salt, pepper, nutmeg, and parsley until all ingredients are combined.
  • Form a ball with the meat mixture and, using your hand, completely cover the San Juan® Egg.
  • To bread, place the flour, egg, and breadcrumbs in 3 separate containers, respectively, and coat the balls first with flour, then with egg, and finally with breadcrumbs; freeze for 20 minutes.
  • In a pot, heat the oil over medium heat and fry the balls for 5 minutes until golden. Remove and place on a plate with paper towels.
  • Serve on a flat plate and decorate with scallions. Accompany with blue cheese dressing.
