Enchilada Leg

Prepare this recipe for a delicious enchilada leg. The leg is pork and is covered with a sauce made from 4 chiles; you will definitely want more.

  • 1 kilo pork leg
  • 1 pinch cilantro seeds
  • 1 head garlic
  • 4 teaspoons chicken bullion
  • 2 ancho chiles
  • 1 cascabel chile
  • 1 morita chile
  • 1 guajillo chile
  • 1 onion
  • 1 pinch thyme
  • 1 pinch cinnamon
  • 1 pinch pepper
  • 1 pinch cumin
  • 1 pinch clove
  • 1/2 liters Tequila
  • 1 stick butter
  • 1/3 cups vinegar

  • Clean all the chiles, soak them in water, vinegar, garlic, onion, cloves, thyme, pepper, cinnamon, cumin, oregano, and coriander seeds.
  • Grind all the ingredients from the first step and strain them, and with this sauce marinate the meat. Add the tequila. Cover it and place it in the refrigerator overnight.
  • Preheat the oven to 180°C. Cover the leg with butter.
  • Put it in to cook, covering it with the same sauce and turning it every half hour. Cook for 1 hour and 20 minutes.
