Marinated Steak Tacos

Delicious marinated steak tacos, with a sweet touch that pairs well with corn tortillas.

  • 3 kilos pork shoulder steak
  • 1 stick achiote
  • 5 cascabel chiles, (deveined and soaked)
  • 1 1/2 cups pineapple juice, or orange (preferably pineapple)
  • 1/2 cups white vinegar
  • 1 teaspoon cumin
  • 1 tablespoon oregano
  • 2 cloves garlic, large
  • 2 onions, large
  • 6 leaves bay
  • 2 kilos corn tortillas, taqueras
  • 1 bunch fresh cilantro
  • árbol chile sauce, for accompaniment

  • All ingredients are ground, EXCEPT: 1 1/2 onion and the bunch of cilantro.
  • In a mold that fits the 3 kg of steak, pour the ground ingredients over the steak and mix to ensure they are well covered with the marinade.
  • The marinated steak is left to rest for one hour in the refrigerator.
  • After an hour, remove the steak, chop it into not-too-small cubes, and fry for half an hour or until the meat looks well cooked or fried according to your preference.
  • Chop the bunch of cilantro and 1 1/2 onion to serve with the tacos.
  • Serve with double tortillas and accompany with chopped cilantro and onion. Pair with árbol chili sauce to taste.
