Blend ¼ cup of onion, 2 garlic cloves with the herbs in a blender. Add 1 tablespoon of oil and rub the turkey breast with this mixture.
Place in the baking tray, add 1 cup of cider, and bake at 350 Fahrenheit (180 °C) until a thermometer reads 165 Fahrenheit (75°C) inside, about one hour, adding ½ cup of water if necessary.
Bring the cider to a boil, add the cranberries and let it sit for a few minutes. In the butter (2 tablespoons), sauté the onion (¼ cup), shallot, and garlic (1 clove).
Add the flour to the onion and shallot and let it cook for a few minutes. Add the cider, cranberries, and honey, and let it simmer on low heat. Season with salt and pepper, and let the cranberries soften, then transfer to a food processor and strain if desired.
Return to heat and let it thicken slightly.
Slice the turkey breast thinly and serve with the cranberry sauce.
