Pickled Chicken Breast

It is accompanied by San Marcos® jalapeño strips, which have the perfect balance of ingredients like carrot, chopped onion, salt, and vinegar. They are tastier than ever!

  • 2 tablespoons olive oil
  • 2 chicken breasts, cut in half
  • 1 cup onion, sliced
  • salt
  • pepper
  • 1 cup new potatoes, cut in halves
  • 1 cup cauliflower, florets
  • 2 cans San Marcos® pickled Jalapeño strips
  • 2 leaves bay
  • 1 sprig thyme
  • white rice, for serving
  • tortillas, for serving

  • In a skillet over medium heat, heat the oil, add the chicken breasts, season with salt and pepper, and brown on both sides; add the onion and cook until softened.
  • Add the baby potatoes, cauliflower, San Marcos® jalapeño strips along with the bay leaves and thyme. Cover the skillet and cook for 30 minutes over medium-low heat.
  • Serve and enjoy with rice and tortillas.
