In a skillet over medium heat, heat the oil, add the chicken breasts, season with salt and pepper, and brown on both sides; add the onion and cook until softened. Add the baby potatoes, cauliflower, San Marcos® jalapeño strips along with the bay leaves and thyme. Cover the skillet and cook for 30 minutes over medium-low heat.
