Delicious Chicharrón in Red Sauce

  • 8 tomatoes
  • 1/2 onions
  • 3 cloves garlic
  • 4 guajillo chiles, seedless
  • 1 serrano chile, without tail
  • vegetable oil
  • salt and pepper
  • 4 cups pork rinds
  • green onion, in rings
  • avocado, in cubes
  • fresh cilantro

  • In a pot of boiling water, cook the tomatoes with the onion, garlic, and chiles until soft. Drain.
  • Blend the cooked vegetables until you get a sauce and fry in a pot with oil for about 15 minutes, season with salt and pepper, add the chicharrón and mix well.
  • Serve the chicharrón and garnish with slices of green onion, avocado, and cilantro. Accompany with beans and corn tortillas.
