Potatoes with Chorizo

  • 500 grams chorizo
  • 500 grams potato, peeled and cooked
  • 2 cups red salsa
  • 200 grams grated cheese
  • 1 tablespoon fresh cilantro, chopped

  • Cut the cooked potatoes into cubes.
  • In a skillet with a little oil over medium heat, cook the chorizo for 8 to 10 minutes, drain, and put it back in the skillet. Add the onion and the potatoes and cook.
  • In a microwave-safe container, add 1/2 cup of the sauce, the mixture of potatoes and chorizo, and the cheese, then add the other 1/2 cup of sauce and repeat the layers until finishing with the mixture.
  • Heat in the microwave for 5 minutes and sprinkle with cilantro. Serve.
