Pastor Gringa

With this gringa recipe, you will learn to make pork pastor from scratch, and it will be very easy and yield a lot. But this is not just any gringa, as it has a different touch thanks to the delicious Herdez® Chiplomango Sauce, which gives it a delightful mango and chipotle flavor that you will love. As an extra tip, you can use gouda cheese or asadero cheese; they will turn out delicious.

  • 3 guajillo chiles, deveined and soaked, for the marinade
  • 1/4 cups pineapple, for the marinade
  • 1 chipotle chile, for the marinade
  • 1/2 cups achiote, liquid, for the marinade
  • 1/2 cups pineapple juice, for the marinade
  • 1/2 cups white vinegar, for the marinade
  • 1 teaspoon cumin, for the marinade
  • 1 teaspoon oregano, for the marinade

  • 500 grams pork steak, diced
  • 1/4 cups chiplomango sauce Herdez®
  • 1/2 cups pineapple, in cubes
  • 1/2 cups onion, finely chopped
  • 1/3 cups fresh cilantro, finely chopped
  • 1/4 cups lime juice
  • salt

  • 12 flour tortillas
  • 2 cups Manchego cheese, sliced
  • chiplomango sauce Herdez®, for serving

  • For the marinade, blend the guajillo chili with the pineapple, chipotle chili, achiote, pineapple juice, vinegar, cumin, and oregano; season with salt and pepper.
  • Place the meat in a baking dish and pour the previous preparation over it, then let it marinate for 30 minutes in the refrigerator.
  • In a skillet over medium heat, heat the oil, fry the meat, and add the Herdez® Chiplomango Sauce; cook for 10 minutes. Set aside.
  • For the pineapple pico de gallo: add pineapple, onion, cilantro, lime juice, salt, and pepper. Set aside.
  • In a comal, heat the flour tortilla, place the pastor, cover with cheese, and top with another tortilla. Heat until the cheese melts.
  • Serve with pineapple pico de gallo. Accompany with Herdez® Chiplomango Sauce and limes. Enjoy.
