  • 1 tablespoon vegetable oil
  • 4 pork chops
  • salt
  • ground pepper
  • 1 cup onion, finely chopped
  • 1/4 cups Jalapeño chile, finely chopped
  • 2 cups tomato, in small cubes
  • 1 cup tomato soup
  • 1/2 cups chicken broth
  • 1/4 cups cilantro, finely chopped
  • spring rice, for accompaniment

  • Heat the oil in a Westinghouse® forged aluminum skillet over medium heat. Add the chops, season with salt and pepper, and cook the chops for 5 minutes on each side. Remove and set aside.
  • Add the onion, chili, and tomato to the same Westinghouse® forged aluminum skillet. Cook for 5 minutes, return the chops to the skillet, pour over the sauce and chicken broth, and cover. Cook for another 10 minutes.
  • Serve in the same Westinghouse® forged aluminum skillet and accompany with primavera rice.
