Traditional Stuffed Pork Loin

Stuffed pork loin is a classic among traditional Mexican recipes. The filling of the loin is simply delicious, with nuts, cranberries, and mashed potatoes. It is a very special dish that you must prepare.

  • 2 kilos pork loin, opened in a thin sheet
  • 50 grams butter
  • 200 grams bacon, minced
  • 1/2 yellow onion, sliced
  • 2 cloves garlic
  • 500 grams mashed potatoes
  • 200 milliliters water
  • 1 jar black olives
  • 150 grams cranberries
  • 150 grams pecans, chopped
  • salt
  • pepper
  • 3 sprigs rosemary

  • Oven Preheated to 190° C
  • Melt the butter in a skillet, fry the bacon with the onion and garlic until slightly golden; add the mashed potatoes and water, mixing until combined.
  • Add the olives, cranberries, walnuts, salt, pepper, and rosemary.
  • Spread the loin and season with salt and pepper on both sides. Fill the loin with the previous mixture, roll it up and tie it.
  • Place the loin in a baking tray, cover with aluminum foil, and bake for one hour.
  • Remove the aluminum foil and bake for 25 more minutes or until golden brown.
