2 kilos pork loin, opened in a thin sheet
50 grams butter
200 grams bacon, minced
1/2 yellow onion, sliced
2 cloves garlic
500 grams mashed potatoes
200 milliliters water
1 jar black olives
150 grams cranberries
150 grams pecans, chopped
salt
pepper
3 sprigs rosemary

Oven Preheated to 190° C
Melt the butter in a skillet, fry the bacon with the onion and garlic until slightly golden; add the mashed potatoes and water, mixing until combined.
Add the olives, cranberries, walnuts, salt, pepper, and rosemary.
Spread the loin and season with salt and pepper on both sides. Fill the loin with the previous mixture, roll it up and tie it.
Place the loin in a baking tray, cover with aluminum foil, and bake for one hour.
Remove the aluminum foil and bake for 25 more minutes or until golden brown.
