Pork Ribs with Sweet Potato

  • 1/2 cups BBQ sauce
  • 1/2 cups cherry jam
  • 2 guajillo chiles, clean and hydrated
  • 1/2 cups red wine
  • 1 clove garlic, roasted
  • 1/4 onions, roasted
  • salt
  • pepper
  • 1 Back Rib Proan®
  • garlic salt
  • pepper
  • 1 sweet potato, sliced

  • Blend the BBQ sauce, cherry jam, guajillo chili, red wine, garlic, onion, salt, and pepper at medium speed. Set aside.
  • Season the Back Rib Proan® with garlic salt and pepper on both sides and brush with the previous preparation. Cook on a grill over medium-high heat for 1 hour. When the ribs are almost ready, brush with the sauce again.
  • For the sweet potato: on the same grill, add the sweet potato, season with a little salt, and cook until soft.
  • Serve the ribs on a cutting board or large plate, drizzle with cherry sauce, and accompany with sweet potato.
