  • 1 onion, cut into pieces
  • 2 cloves garlic
  • 2 tomatoes, cut into cubes
  • 2 tomatillos, cut into cubes
  • 3 pasilla chiles, cleaned, deveined, and seedless
  • 2 morita chiles, cleaned, deveined, and seedless
  • 1/4 cups fresh cilantro
  • 1 tablespoon allspice berry, whole
  • 1 tablespoon cumin, whole
  • 1 clove
  • 1 cup vegetable broth
  • 1 tablespoon salt
  • 1 cup onion, filleted
  • 8 pork chops
  • 3 nopales, cooked
  • queso fresco, for serving

  • Heat a deep skillet over medium heat with a tablespoon of oil and sauté the onion with the garlic. Add the tomato, the tomato, the pasilla chili, the morita chili, the cilantro, the allspice, the cumin, the clove, and cook until everything softens.
  • Fill with vegetable broth and cook for 10 minutes or until the liquid reduces, season with salt and remove. Cool slightly, blend the preparation until you obtain a sauce, and strain if necessary.
  • Heat a skillet over medium heat with the remaining oil, cook the onion and the chops until browned on both sides. Pour in the sauce, add the nopales, and cook for 10 more minutes.
  • Serve the chops and sprinkle with crumbled fresh cheese.
