Pork Ribs with Roasted Potatoes

  • 1 1/2 kilos pork ribs, cut into pieces
  • 1/2 cups olive oil
  • 1 cup Del Fuerte® natural tomato purée
  • 2 tablespoons Tabasco sauce
  • 1 tablespoon mustard
  • 1/2 cups sugar
  • 2 tablespoons onion
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Maggi seasoning sauce
  • 1 tablespoon thyme
  • 1 tablespoon marjoram
  • 2 leaves bay
  • 3 tablespoons honey
  • 1 kilo new potatoes
  • 1 pinch salt
  • 1 pinch pepper
  • 1 sprig rosemary
  • 3 tablespoons olive oil

  • Preheat the oven to 180°C.
  • Place the cut pork ribs on a baking sheet, brush them with oil and a little pepper, and set aside.
  • Thoroughly mix the marinade ingredients. Add the mixture to the ribs and coat them well.
  • Bake the ribs for 30 minutes, basting well with the marinade to prevent them from drying out.
  • On another baking sheet, add the potatoes mixed with oil, the sprigs of rosemary, season, and bake for another 30 minutes until the potatoes are cooked through and tender.
