This torta is perfect for your leftovers; it’s easy, quick, and economical. Use what you have left from your Christmas meal to make this tasty pork torta.
4 guajillo chiles, for the sauce, roasted and soaked
2 cloves garlic, roasted, for the sauce
1/4 onions, roasted, for the sauce
1 cup chicken broth, for the sauce
1 kilo pork loin, marinated and cooked
1/2 cups butter
1 cup onion, sliced
salt
pepper
1 teaspoon oregano
6 pieces telera roll
mayonnaise
refried beans
avocado
tomato
pickled chiles

Shred the pork and set aside.
Blend the chiles, garlic, onion, and chicken broth. Set aside.
In a skillet over medium heat, add butter, sauté the onion until translucent, add the pork and red sauce, season with salt, pepper, and oregano, and cook for 15 minutes over low heat.
Cut the telera bread in half, spread mayonnaise on one side and a bit of beans on the other, add the pork, and top with avocado, beans, and chiles to taste.
