Potato Skewers with Chipotle Sauce

  • 1 can evaporated milk, (378 grams)
  • 1/2 cups water
  • 1 cube chicken broth, 40% less fat
  • 1 bag Maggi mashed potato flake, (80 grams)
  • 1 chipotle chile in adobo sauce, seedless
  • 1 teaspoon cornstarch
  • 1 dice onion and garlic seasoning
  • 100 grams chicken drumstick, cooked and shredded

  • Heat ½ can of evaporated milk with water and the 40% less fat chicken broth cube until it reaches a boil.
  • Turn off the heat. Add the potato flakes and mix.
  • For the sauce: blend the rest of the evaporated milk with the chipotle chili, cornstarch, and the onion garlic seasoning cube.
  • Heat the sauce until it thickens slightly, stirring constantly to prevent sticking.
  • Form small balls with the mashed potatoes, place a bit of chicken in the center, and insert 3 balls onto the skewers.
  • Heat a skillet and cook on both sides until cooked and golden. Serve drizzled with the chipotle sauce.
