  • Peel the onion and garlic. Chop the onion finely and slice the garlic. Clean the meat of excess fat, and if it isn't already chopped, cut it into medium pieces.
  • Place a pot over medium heat and add the oil. Then add the onion, garlic, bay leaf, and a small spoonful of salt. Let it cook until they soften and take on some color.
  • Then raise the heat and add the chopped meat. Let it brown a bit, and when all the liquid has evaporated, add the white wine.
  • Let the wine evaporate, and while it does, use a wooden spoon to scrape the bottom of the pot to release any crust that may have stuck.
  • When the wine has completely reduced, add the water and a small spoonful of salt. Cover the pot and let it cook until the meat is tender.
  • If you use a regular pot, it will take between 1 and 2 hours depending on the type of meat and the strength of the heat.
  • If you use a pressure cooker, 25 minutes will be more than enough to tenderize the pork.
  • While the meat is cooking, peel the potatoes, rinse them, and cut them into chunks. Also, peel the carrots and cut them into thick slices.
  • When the meat is tender, add the potatoes and carrots. If necessary, add a bit more broth to cover the potatoes. Cover the pot again and let it simmer for about 25/30 minutes if using a regular pot or just 10 minutes in a pressure cooker.
  • When the potatoes are tender, taste the broth for salt, and if necessary, add a bit more salt. If you like, also add a pinch of ground black pepper.
