This recipe is for a dish of potatoes with meat to share with your whole family. Prepare it as a main dish and serve it with a good salad and flavored water.
Peel the onion and garlic. Chop the onion finely and slice the garlic. Clean the meat of excess fat, and if it isn't already chopped, cut it into medium pieces.
Place a pot over medium heat and add the oil. Then add the onion, garlic, bay leaf, and a small spoonful of salt. Let it cook until they soften and take on some color.
Then raise the heat and add the chopped meat. Let it brown a bit, and when all the liquid has evaporated, add the white wine.
Let the wine evaporate, and while it does, use a wooden spoon to scrape the bottom of the pot to release any crust that may have stuck.
When the wine has completely reduced, add the water and a small spoonful of salt. Cover the pot and let it cook until the meat is tender.
If you use a regular pot, it will take between 1 and 2 hours depending on the type of meat and the strength of the heat.
If you use a pressure cooker, 25 minutes will be more than enough to tenderize the pork.
While the meat is cooking, peel the potatoes, rinse them, and cut them into chunks. Also, peel the carrots and cut them into thick slices.
When the meat is tender, add the potatoes and carrots. If necessary, add a bit more broth to cover the potatoes. Cover the pot again and let it simmer for about 25/30 minutes if using a regular pot or just 10 minutes in a pressure cooker.
When the potatoes are tender, taste the broth for salt, and if necessary, add a bit more salt. If you like, also add a pinch of ground black pepper.
