1/3 cups breadcrumbs, baguette
1/2 cups parsley, chopped
cloves garlic, chopped
1 shallot, chopped
3 tablespoons butter
1 teaspoon ground mustard
cayenne pepper

Preheat the oven to 150 degrees Celsius. Place the bread on a baking tray and put it in the oven to dry. Watch it closely to prevent it from browning.
Mix the garlic, bread, shallot, and parsley. Melt the butter and add the mustard powder and cayenne pepper.
Season the rack with salt and pepper. Spread it with butter and coat both sides of the rack with the parsley mixture.
Sear the ribs in a skillet (3 minutes on each side) and then place them on a baking tray in the oven for 20 minutes until cooked medium.
Once ready, remove from the oven and cover with aluminum foil. Let it rest for 10 minutes to prevent the juices from escaping.
Cut the ribs and serve with potatoes and mint jelly.
