1 1/2 kilos pork loin, clean cut into small pieces
2 bottles ketchup, medium
1 cabbage, large chopped, soaked for 12 hours and well rinsed
250 grams pork rinds
chipotle chiles, pickled to taste
2 1/2 white onions
2 heads garlic, unpeeled
coarse salt
pork broth
pepper
corn tortillas
refried black beans

Rinse the meat pieces very well and cook them in a pressure cooker with enough water to cover the meat along with the 1/2 onion and the whole garlic cloves.
Once cooked, the meat is shredded very finely and fried slowly with a bit of the meat broth until it is browned. It is drained and removed from the pan.
In the same pan, sauté the 2 chopped onions, and then add the cabbage.
Add the meat, season with coarse salt and pepper, and add the tomato sauce and ground chipotles with a bit of broth, strained.
Let it simmer on low heat for 1 to 2 hours with the pan lid on. When almost ready, add more broth and the pieces of pork cracklings to bring everything to a boil.
Remove from heat, let it cool a bit, and serve it with freshly made tortillas and well-refried black beans.
