Ingredients: 1 1/2 kilos pork loin, clean cut into small pieces; 2 bottles ketchup, medium; 1 cabbage, large chopped, soaked for 12 hours and well rinsed; 250 grams pork rinds; chipotle chiles, pickled to taste; 2 1/2 white onions; 2 heads garlic, unpeeled; coarse salt; pork broth; pepper; corn tortillas; refried black beans

Rinse the meat pieces very well and cook them in a pressure cooker with enough water to cover the meat along with the 1/2 onion and the whole garlic cloves. Once cooked, the meat is shredded very finely and fried slowly with a bit of the meat broth until it is browned. It is drained and removed from the pan.
